A herbaceous update on old-fashioned succotash, this colorful vegetable side dish ditches the lima beans for organic split peas. Don't forget to finish with a generous dash of your favorite hot sauce!

  • 1 cup Farmer Direct Organic split peas

  • ½ tsp. salt
  • 3 cups water
  • 2 Tbsp. olive oil or butter
  • 1 cup diced sweet onion
  • 1 cup diced orange or red bell pepper
  • 2 c. sweet corn (either frozen or cut from fresh ears)
  • 1 Tbsp. fresh thyme, finely chopped
  • 3/4 tsp. salt
  • ½ tsp. freshly ground black pepper
  • 2 c. cherry tomatoes, halved
  • 3 Tbsp. chopped fresh basil
  • 1 Tbsp. apple cider vinegar
  • Hot sauce to taste

       

       

       Directions

      In a small sauce pan, bring 3 cups water plus ½ tsp. salt to a boil. Add 1 cup rinsed Farmer Direct Organic split peas. Reduce heat, cover, and simmer about 30 minutes, until peas are cooked but not falling apart. Drain.

      While peas are cooking, heat oil or butter in a sauté pan. Add onion and cook until translucent, about 5 minutes. Add bell pepper, corn, thyme, salt, and pepper. Cook for another few minutes or until vegetables are tender and bright. Turn off heat.

      In a mixing bowl, combine cherry tomatoes, basil, and apple cider vinegar. Add cooked peas and vegetables and gently stir. Add hot sauce and adjust seasoning to taste. Serve warm or at room temperature.
