Organic Split Green Peas

Split Pea Soup
- 1 1/2 Tbsp. olive oil
- 1 sweet onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- Salt and pepper
- 1 cup Farmer Direct Organic Split Green Peas
- 6 cups chicken or vegetable stock
- 1 bay leaf
- 1 russet potato, diced
- 1 cup cooked ham or bacon (optional)
Heat olive oil in a large pot over medium heat until shimmering. Add onions, carrots, garlic, salt and pepper. Cook, stirring occasionally, until onions are translucent, about 5 minutes. Add split peas, stock and bay leaf. Bring to a boil, reduce heat, cover and simmer 30 minutes. Add potato and ham or bacon (if using). Simmer 20 minutes until peas are soft and potatoes are tender.
