Organic Split Red Lentils

Our quick-cooking Organic Split Red Lentils are ideal for dips and soups because they break down the longer they cook, resulting in a creamy, satisfying, protein-rich dish. The mildly sweet and nutty flavor goes especially well with Indian-style cuisines such as dal and curries. Like other lentils, they are an excellent source of protein and fiber.

Cooking Instructions

Boil 3 cups salted water or stock and add 1 cup rinsed lentils. Reduce heat, cover and simmer 15 to 25 minutes, depending on desired firmness. Remove from heat, drain and enjoy! For extra seasoning, add herbs or vegetables directly into cooking liquid.

Red Lentil Soup

Serves 6

  • 1 Tbsp. olive oil
  • 1 large carrot, diced
  • 2 large celery stalks, diced
  • 1 sweet onion, diced
  • Salt and pepper
  • 1 cup Farmer Direct Organic Split Red Lentils
  • 4 cups chicken or vegetable stock
  • 1 bay leaf

Heat olive oil in a large pot over medium heat until shimmering. Add carrot, celery, onion, and season with salt and pepper. Cook, stirring occasionally, until onions are translucent, about 5 minutes. Add lentils, stock and bay leaf and bring to a boil. Reduce heat, cover and simmer until lentils are soft, about 20 minutes.
