This French Green Lentil Hummus comes together quickly in a food processor. The result is a silky smooth, nutty purée great for dipping or spreading on sandwiches.
- 1 cup Farmer Direct Organic French Green Lentils
- 3 cups water or vegetable broth
- 2 garlic cloves
- 1/4 cup olive oil, plus extra for drizzling
- 1/4 cup tahini
- 2 Tbsp. lemon juice
- 1 tsp. ground cumin
- Salt to taste
Cook lentils with broth according to package instructions; drain and cool completely.
Place all ingredients into a food processor. Process until smooth, scraping down sides of bowl as needed.
Transfer hummus to a bowl and drizzle with additional olive oil. Serve with pita wedges, vegetables or crackers.
