Cooking Instructions

Soak 1 cup pinto beans in 3 cups water for at least 8 hours. Drain and rinse. Bring beans and 3 cups fresh water or stock to a boil in a medium pot. Reduce heat and simmer 1.5 to 2.5 hours, uncovered for firm beans or partially covered for creamier beans. Add liquid as needed to keep beans submerged throughout cooking time. Remove from heat, drain and season as desired.

Creamy Bean Dip

Makes 2 cups

  • 1 3/4 cups Farmer Direct Organic Pinto Beans, rinsed and drained
  • 1 Tbsp. olive oil
  • 3 Tbsp. chopped red bell pepper
  • 2 garlic cloves, chopped
  • 3/4 tsp. chili powder, plus extra for garnish
  • 1/4 tsp. dried oregano
  • Salt and pepper
  • Optional toppings: cilantro, grilled corn, seasoned black beans, green chilies, jalapeños

Cook pinto beans according to package instructions; drain and set aside. Heat oil in a large pot over medium heat until shimmering. Add cooked beans, onion, bell pepper, garlic and chili powder. Cook, stirring often, until onions are translucent, about 7 minutes. Add mixture to food processor with oregano, salt, pepper and 1/4 cup of water. Pulse until smooth. Sprinkle with a little more chili powder and add desired toppings. Enjoy with tortilla chips or veggies.
