Cooking Instructions

For the stovetop, bring 1 ½ cups water and ¼ tsp salt (optional) to a boil and add ½ cup steel cut oats. Reduce heat to a simmer and cook for 20-25 minutes (or longer depending on desired consistency, firm to soft and creamy). Stir occasionally. Blueberry Pecan Baked Oatmeal

Serves 9

  • 3/4 cup Farmer Direct Organic Steel Cut Oats
  • 1/2 cup pecans, roughly chopped
  • 1 tsp. baking powder
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 cups milk (dairy or non-dairy)
  • 1/3 cup pure maple syrup
  • 1 large egg
  • 3 Tbsp. butter, melted and cooled
  • 1 tsp. vanilla extract
  • 3/4 cup fresh or frozen blueberries

Heat oven to 350 degrees. In a 9-by-9-inch baking pan, combine oats, pecans, baking powder, cinnamon and salt. In a separate bowl, whisk together milk, syrup, egg, butter and vanilla. Pour milk mixture over oat mixture; shake pan to distribute. Evenly sprinkle blueberries on top. Bake for 55 to 60 minutes, until top is golden and mixture has set. Remove from oven and let stand 15 minutes before cutting into 9 squares for serving.
