Everybody needs a quick bean dip in their arsenal, and this should be the one! Perfectly smooth and savory with just the right amount of spice. Great as a lunchtime option with veggies, or as an appetizer.
- 1 3/4 cups Farmer Direct Organic Pinto Beans, rinsed and drained
- 1 Tbsp. olive oil
- 3 Tbsp. chopped red bell pepper
- 2 garlic cloves, chopped
- 3/4 tsp. chili powder, plus extra for garnish
- 1/4 tsp. dried oregano
- Salt and pepper
- Optional toppings: cilantro, grilled corn, seasoned black beans, green chilies, jalapeños
Cook pinto beans according to package instructions; drain and set aside.
Heat oil in a large pot over medium heat until shimmering. Add cooked beans, onion, bell pepper, garlic and chili powder. Cook, stirring often, until onions are translucent, about 7 minutes.
Add mixture to food processor with oregano, salt, pepper and 1/4 cup of water. Pulse until smooth.
Sprinkle with a little more chili powder and add desired toppings. Enjoy with tortilla chips or veggies.
