Split Pea Soup

Comforting, classic split pea soup that you should make all winter long—or whenever the craving strikes!

  • 1 1/2 Tbsp. olive oil
  • 1 sweet onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • Salt and pepper
  • 1 cup Farmer Direct Organic Split Green Peas
  • 6 cups chicken or vegetable stock
  • 1 bay leaf
  • 1 russet potato, diced
  • 1 cup cooked ham or bacon (optional)

 

 Directions

Heat olive oil in a large pot over medium heat until shimmering. Add onions, carrots, garlic, salt and pepper. Cook, stirring occasionally, until onions are translucent, about 5 minutes.

Add split peas, stock and bay leaf. Bring to a boil, reduce heat, cover and simmer 30 minutes. Add potato and ham or bacon (if using).

Simmer 20 minutes until peas are soft and potatoes are tender.
